Avocado Devilled Eggs

What are devilled eggs?

Devilled eggs are a classic dish with roots tracing back to Ancient Rome. The original concept of hard-boiled eggs filled with a seasoned paste of their yolks has transformed over the centuries, with various cultures adding their own twists. In modern times, devilled eggs are often associated with Southern American cuisine, where they’re commonly served at family gatherings, barbecues, and holidays. Traditionally made with mayonnaise, mustard, and spices, the name “devilled” refers to the inclusion of fiery or spicy ingredients. Today, we’re giving this dish a contemporary, healthy makeover by swapping the mayonnaise for creamy avocado to create avocado devilled eggs, a delicious and nutritious alternative that is sure to be a crowd-pleaser.

What inspired these devilled eggs?

Well this is quite an interesting story. One day last summer, my son came to me amidst a fascination of recreating foods seen in popular video games. We had recently made Salisbury steak which he had commonly come across whilst playing Fallout 4 a game set in a radioactive post war wasteland. This time, he wanted to make devilled eggs but exclaimed that they must be radioactive and neon green to fit the theme, After explaining that id rather avoid feeding him radioactive food I started to plan these nuclear fallout themed eggs and thus, the avocado devilled eggs recipe was born and quite quickly devoured.

Are devilled eggs healthy?

Step 1: Boil the eggs

Start by placing six eggs in a saucepan and cover them with cold water. Bring the water to a boil over medium heat. Once boiling, reduce the heat slightly and let the eggs simmer for 10 minutes to hard boil them. After 10 minutes, drain the hot water and run cold water over the eggs until they’re completely cool to the touch. Once cooled, gently tap each egg all over with the back of a spoon to crack the shell. Peel off the shell, starting from the wider end where the air pocket is, using the side of your thumb and not your nail. This ensures you remove the shell smoothly without breaking the egg whites.

Step 2: Prepare the avocado filling

Slice each peeled egg in half lengthwise using a sharp knife. Take care to cut cleanly through the egg whites without tearing them. Once halved, gently remove the yolks and place them into a medium-sized bowl. The egg whites will serve as the base for your filling later, so place them cut-side up on a plate while you prepare the filling. In the bowl with the yolks, add the flesh of one ripe avocado, the juice of half a lime, ¼ teaspoon of garlic powder, ¼ teaspoon of dried parsley, a pinch of chilli flakes, and generous pinches of salt and pepper. The lime juice not only adds a zesty flavour but also helps to prevent the avocado from browning.

Using a fork or a potato masher, thoroughly mash the yolks and avocado together until smooth and creamy. Ensure that no lumps remain, as the goal is a velvety consistency. The garlic powder and parsley bring subtle depth, while the chilli flakes give a slight heat. Continue mashing until the mixture is well combined and no distinct chunks of egg yolk or avocado remain.

Step 3: Fill the eggs

Once your filling is smooth and creamy, transfer the mixture into a piping bag fitted with a large star nozzle. If you don’t have a piping bag, you can use a plastic sandwich bag as a substitute – just spoon the mixture into the bag and snip off one of the corners to create a makeshift piping tip.

Begin piping the filling into the hollowed egg whites. Start from the centre of each egg and swirl the filling outward to create a beautiful pattern with the star nozzle. Be generous with the filling, and don’t worry if you have a bit leftover – you can use it later as a spread or dip. If you prefer not to pipe, you can also spoon the mixture directly into the egg whites, though piping will give a more elegant look.

Once all the eggs are filled, you can store any extra filling in an airtight container for later use. The leftover avocado mixture is incredibly versatile; try it spread on toast or added to sandwiches or wraps for a creamy, flavour-packed boost.

Step 4: Garnish and serve

To finish, sprinkle a small pinch of smoked paprika or additional chilli flakes over the top of each filled egg. The smoked paprika will add a subtle depth of flavour while enhancing the visual appeal with its rich red colour. You can serve the avocado devilled eggs immediately or refrigerate them until needed. They’re perfect for a snack, appetiser, or a light, healthy party dish that’s sure to impress.

FAQ

Can I prepare avocado devilled eggs in advance?
Yes, you can prepare the eggs and the filling ahead of time, but it’s best to assemble them just before serving to keep the avocado fresh. Store the filling in an airtight container in the fridge, pressing plastic wrap directly onto the surface to prevent browning.

How long can they be stored in the fridge?
Once assembled, avocado devilled eggs can be stored in the fridge for up to two days. Be aware that the avocado filling may darken slightly over time.

Can avocado devilled eggs be frozen?
No, freezing isn’t recommended, as the texture of the avocado filling can become watery and unappealing once thawed.

How can I peel hard-boiled eggs easily?
Cool the eggs under cold running water immediately after boiling, which helps the shells separate from the egg whites. Tapping the eggs all over with the back of a spoon and peeling with your thumb ensures smooth, unbroken eggs.

Can I add more spice?
Yes, feel free to increase the amount of chilli flakes, or add a splash of your favourite hot sauce to the filling for a spicier version.

What can I do with leftover filling?
Leftover avocado filling is perfect for spreading on toast or using as a dip for veggies. It’s also fantastic inside wraps or as a topping for grilled chicken or turkey burgers.

Can I use something other than avocado?
If you’re not an avocado fan, you could substitute it with Greek yoghurt or hummus to maintain the creamy texture while giving the recipe a different flavour profile.

This avocado devilled eggs recipe is a fresh, flavourful, and ultra processed food free recipe that’s easy to make and sure to impress at any gathering!
