We’ve all been there. Knowing we need a healthy meal but really wanting a beef burger or a cheeseburger. So, whilst trying to decide what to do with some leftover burger cheese but knowing I really didn’t want to use up all my calorie allowance on a burger I decided to go for the healthier low calorie option and deconstructed the typical takeaway burger into a nourishing salad, a cheeseburger salad recipe! This healthy recipe is designed to suit 1 person. Please don’t forget to increase ingredients if you have more mouths to feed! P.S. This cheeseburger salad recipe is great for the following diets:

Its so simple, it barely needs explaining so I’ll keep this short and sweet. Lettuce, gherkins, lightly seasoned beef mince and the special burger sauce topped with cheese. Typically fast food places such as McDonalds and Burger King use Batavia or Romaine lettuce, however this time I had some mixed baby leaves that needed using up so I substituted for those. I’ve been growing some nice big heads of Romaine the last month or so, so I cant wait to make a Cheeseburger salad recipe with that. I also opted for mini gherkins instead of the traditional sized pickle because that’s just what I had to hand.

Even making the sauce for this meal is super simple. Mix together mayonnaise, salad cream, mustard powder, paprika, garlic powder and onions and your done! You could even increase the ingredient quantities and freeze up portions like my other home made sauces.

A super simple, quick and effortless meal that really satisfies a fast food craving.

Ingredients
  

  • 100 g beef mince <5% fat
  • salt and pepper to taste
  • 50 g lettuce of your choice
  • 1 gherkin pickle
  • 1 cheese slice

Burger sauce

  • 2 tbsp light mayo
  • ½ tsp pickle juice
  • ¼ tsp mustard
  • 1 tsp paprika
  • tsp garlic powder
  • 1 tsp finely diced onion

Instructions
 

  • Shred your choice of lettuce, slice gherkins (pickles) and finely chop 1tsp worth of onion
    50 g lettuce, 1 gherkin, 1 tsp finely diced onion
  • Mix up burger sauce.
    2 tbsp light mayo, ½ tsp pickle juice, ¼ tsp mustard, 1 tsp paprika, ⅛ tsp garlic powder, 1 tsp finely diced onion
  • Cook 100g of beef mince in frying pan with pinch of salt and pepper.
    100 g beef mince, salt and pepper
  • Plate lettuce with sliced gherkins and top with cooked beef.
  • Top with cheese and sauce.
    1 cheese slice
