So, whilst trying to decide what to do with some leftover burger cheese but knowing I really didn’t want to use up all my calorie allowance on a burger I decided to go for the healthier low calorie option and deconstructed the typical takeaway burger into a nourishing salad, a cheeseburger salad recipe! While popular fast-food joints like McDonald’s and Burger King typically feature Batavia or Romaine lettuce, I decided to switch things up by using a medley of mixed baby leaves that were waiting to be savored. Lately, my garden has yielded some impressive heads of Romaine, and the prospect of crafting a Cheeseburger Salad with them has me eagerly anticipating the vibrant flavors. For a playful twist, I opted for mini gherkins instead of the traditional-sized pickles—simply because that’s what was readily available in my kitchen.

Its so simple, it barely needs explaining so I'll keep this short and sweet. Lettuce, gherkins, lightly seasoned beef mince and the special burger sauce topped with cheese.

Ingredients
  

  • 100 g beef mince <5% fat
  • salt and pepper to taste
  • 50 g lettuce of your choice
  • 1 gherkin pickle
  • 1 cheese slice

Burger sauce

  • 2 tbsp light mayo
  • ½ tsp pickle juice
  • ¼ tsp mustard
  • 1 tsp paprika
  • tsp garlic powder
  • 1 tsp finely diced onion

Instructions
 

  • Shred your choice of lettuce, slice gherkins (pickles) and finely chop 1tsp worth of onion
    50 g lettuce, 1 gherkin, 1 tsp finely diced onion
  • Mix up burger sauce.
    2 tbsp light mayo, ½ tsp pickle juice, ¼ tsp mustard, 1 tsp paprika, ⅛ tsp garlic powder, 1 tsp finely diced onion
  • Cook 100g of beef mince in frying pan with pinch of salt and pepper.
    100 g beef mince, salt and pepper
  • Plate lettuce with sliced gherkins and top with cooked beef.
  • Top with cheese and sauce.
