Step 1: Prepare the vegetables

Before heating the pan, it’s crucial to prep the ingredients: dice the onion, slice the mushrooms, and finely chop the garlic. Then, as the pan warms over medium-high heat, add a drizzle of oil or a splash of water if you would rather omit the oil. Proceed by sautéing the prepared onions and mushrooms for 5 minutes until tender, allowing their flavours to meld. After this initial sautéing, add the garlic and continue cooking for an additional 2 minutes until fragrant. This step-by-step process ensures that each ingredient cooks perfectly without burning, resulting in a deliciously flavourful base for your stroganoff.

Step 2: Add the chicken

Now, it’s time to introduce the star ingredient: chicken. Dice the chicken breasts into bite-sized pieces, ensuring they are reasonably uniform in size for even cooking. Add the diced chicken to the pan, spreading it out in a single layer to allow each piece to brown evenly. Let the chicken cook undisturbed for about 2 minutes on each side until it develops a golden-brown crust. Avoid overcrowding the pan, as this can cause the chicken to steam rather than brown.

Step 3: Add the seasonings

While the chicken is browning, prepare the chicken stock mixture. In a measuring jug, combine the chicken stock, apple cider vinegar, soy sauce, mustard powder, and allspice. Whisk the ingredients together until well combined, creating a flavourful base for the stroganoff. Once the chicken is browned on all sides, pour the prepared chicken stock mixture into the pan, deglazing it to release any flavourful browned bits stuck to the bottom. Stir well to incorporate the ingredients, ensuring the chicken is fully coated in the savoury sauce. Allow the mixture to come to a gentle simmer, then reduce the heat to low. Let it simmer uncovered for 3-5 minutes, allowing the flavours to meld and the sauce to reduce slightly.

Step 4: Thicken the sauce

While the sauce is simmering, prepare the cornflour slurry. In a small bowl, combine a few spoonfuls of the hot liquid from the pan with the cornflour, stirring until smooth and lump-free. This slurry will act as a thickening agent, giving the stroganoff its signature creamy texture. Making a cornflour slurry really is a crucial step, if you add the cornflour straight to the pan it will not mix in. Gradually pour the cornflour slurry into the pan, stirring continuously to prevent lumps from forming. Cook for an additional 2-3 minutes, or until the sauce thickens to your desired consistency.

Step 5: Make it creamy

With the sauce thickened to perfection, it’s time to add the final touch: yogurt. Remove the pan from the heat and gradually stir in the fat-free yogurt until well combined. Be sure to stir gently and avoid boiling the stroganoff, as high heat can cause the yogurt to curdle. Once the yogurt is fully incorporated, taste the stroganoff and adjust the seasoning if necessary. Sprinkle fresh parsley over the top for a burst of colour and flavour. Serve the Healthy Chicken Stroganoff immediately, spooned over cooked rice, pasta, or mashed potatoes, and garnished with additional parsley if desired. Enjoy the comforting goodness of this nourishing dish, knowing that each bite is a celebration of health and flavour.
