Start by giving those canned chickpeas a good drain – a 400g can should be about 240g of chickpeas once drained. Remember, if you opt for the dried variety, ensure they’re precooked according to packet instructions and cooled. Now, dice up the cucumber, orange pepper, and red onion. For that burst of freshness, finely chop a teaspoon and a half each of dill and mint.

I think my most important tip for Tzatziki is to use fresh ingredients, fresh yogurt, fresh crunchy cucumber but especially fresh herbs. Fresh herbs are much more fragrant than dried herbs and their flavours will flow beautifully throughout the yogurt. Traditionally, tzatziki would be made with full fat Greek yogurt however for this recipe I swap to fat free to keep the recipe diet friendly.

Ingredients
  

  • 400 g can of chickpeas 240g drained
  • 3 ” length of cucumber diced
  • 10 cherry tomatoes halved
  • 1/2 orange pepper diced
  • 1/2 red onion diced
  • 1 tsp dill fresh – optional
  • 1 tsp mint fresh – optional
  • 1 pinch salt optional

For the tzatziki dressing:

  • 1/2 cup fat free Greek yogurt
  • 1/2 tsp dill fresh
  • 1/2 tsp mint fresh

Instructions
 

  • Drain the chickpeas which should already be cooked if canned (dried chickpeas can be used but must be pre cooked as per packet instructions). Dice the cucumber, pepper, onion and finely chop the herbs.
  • Mix all of the chickpeas and vegetables together in a large bowl.
  • In a small dish, mix together the yogurt with 1/2 tsp of dill and 1/2 tsp of mint. Add this to the chickpea salad and stir thoroughly.
  • Taste the chickpea salad, and if you feel it necessary you can add the extra dill and mint but this is down to preference.
