How to make healthy toffee apples with date caramel:
Step 1: Soak the dates
Firstly, soak the dates in hot water for 10 minutes to soften them. Once soft, drain the water but keep it to hand as you will need to use some to help the dates blend into a caramel. Pre-soaking the dates helps them soften up meaning they will blend a lot easier. If you are using dates that have not been pitted you will also want to remove the pits now.

Step 2: Prepare the apples
Whilst your dates are soaking, crush your hazelnuts and set them aside, how much you crush them up is completely down to preference, I prefer larger chunks but do find it hard to get larger pieces to stick to the date caramel without falling off. You can also place a wooden skewer through the middle of the apple to hold the apple once its covered in caramel. You should make sure whatever skewers you use are strong enough to hold the weight off the apple.

Step 3: Create the date caramel
Place the dates into a blender or food processer along with the peanut butter, maple syrup and 2-3 tablespoons of the date water. You will likely need more water but add this as you go. Blend, scraping the sides down regularly until you have a smooth but thick caramel. Add any water sparingly as its easy to add too much, before adding more water, try giving the date caramel a little stir and scraping the sides down towards the blades to see if this loosens the mixture. If the date caramel becomes too thin it will slide of the healthy toffee apples.

Step 4: Coat the healthy toffee apples in date caramel and hazelnuts
Using a spoon, completely cover each apple with the thick layer of the date caramel before dipping them into the crushed hazelnuts. I like to cover about 1/3 of the apple with the hazelnuts but you can cover them as much as you like. Store these apples in the fridge for up to 2 days.
