Step 1: Create the crunchy tuna filling

Start by draining the tuna and placing it in a medium-sized bowl along with the cheddar. Add the finely diced red pepper, thinly sliced spring onion, and chives. Season with a pinch of salt and pepper, and mix in 1/3 of the mayonnaise – just enough to bind the ingredients together. Avoid adding too much mayo; the filling should be thick and reasonably dry, not runny or resembling tuna mayo. Excess mayo can cause the mixture to spill out as the cheddar melts, making the toastie difficult to handle.

Optional Step: Score the sourdough for an epic cheese pull

For an extra aesthetic touch and to achieve an epic cheese pull, lightly score both slices of sourdough where you plan to cut the toastie in half later. This step is purely optional but can make slicing easier without squashing the filling or tearing the cheese strands. When you come to cut your toastie in half, just cut through the bread and flip to cut the bread underneath. If skipping, proceed directly to the next step.

Step 2: Build your toastie

Lay one slice of sourdough on a flat surface. Scatter half the mozzarella pieces across the bread. Mozzarella is chosen for its excellent meltability and iconic cheese pull. Spread the tuna mixture over the mozzarella in a 1–2 cm thick layer, leaving a gap around the edge. You may find you have some left over tuna mixture depending on the size of your bread. Top with the remaining mozzarella pieces. Add the second slice of sourdough on top to close the sandwich, pressing gently to seal. You should also preheat your toastie maker or grill now.

Step 3: Add the finishing touch

Spread a thin, even layer of mayonnaise on the outside of both slices of bread. This is a pro tip for achieving a beautifully golden, crispy crust without needing extra butter or oil as well as adding extra flavour to the sourdough.

Step 4: Grill your tuna melt toastie

Carefully place the sandwich in your appliance. Toast for 3–5 minutes, or until the bread is golden and crisp, and the filling is warm and gooey. If using a frying pan or grill, press gently with a spatula and flip halfway through cooking for even toasting. Remove when the sourdough is well toasted and the tuna filling starts to sizzle.

Step 5: Slice and serve

Let the toastie rest for 1–2 minutes to cool slightly. This step prevents the cheese from spilling out when cut. Use a sharp knife to slice along the scored lines if you opted for scoring, or simply cut through carefully. Serve warm and enjoy immediately!
