Now, add the sundried tomatoes and dry seasonings to the mix, letting their aromas fill the kitchen briefly for about 1-2 minutes. It’s important to keep an eye on them; they can burn if left in a hot pan for too long. Now, what you do with the spinach is up to you: Either stir the wilted spinach directly into the sauce for a seamless integration, or take a more visual route. Personally, I prefer reserving the spinach and placing it on top of the dish in the next step. There’s something uniquely delightful about how those spinach bits poking out from the sauce go wonderfully crispy alongside the chicken.

After 25-30 minutes your chicken should be almost cooked, with no raw chicken on the outside, it Doesn’t need to be full cooked just have some colour to the outside for a more appealing look and texture. I find chicken cooked from raw in a sauce tends to keep that raw texture regardless of how long its been cooked and nobody wants questionable chicken. Now the sauce and the chicken will be ready to meet. I like to remove the chicken breasts from the pan momentarily, pour all of the sauce into the dish with the spinach placed on top and then nestle the Tuscan chicken breasts back into the oven proof dish. Return to the oven for 15 minutes to complete cooking.

Ingredients
  

  • 4 chicken breasts 600g
  • 400 ml chicken stock
  • 100 g drained sundried tomatoes
  • 1 large red pepper
  • 100 g low-fat soft cheese
  • 2 tbsp parmesan
  • 1.5 tbsp apple cider vinegar
  • 2 tsp oregano
  • 2 tsp paprika

Instructions
 

  • Preheat the oven to 200°C.
  • Place chicken breasts in an oven-proof dish, bake for 25-30 mins, turning halfway.
  • Meanwhile, dice the red pepper and tomatoes. In a pan, soften the red pepper for 3-5 mins.
  • Make a cornflour slurry with 2 tsp cornflour and a splash of chicken stock, set aside.
  • Add tomatoes and dry seasonings to the pan, cook for 1-2 mins.
  • Add apple cider vinegar and chicken stock to the pan, warm, then add the cornflour slurry. Stir for 5 mins until thickened.
  • Stir in low-fat soft cheese and parmesan until melted. Remove from heat.
  • Wilt spinach in the microwave for 1 min. Stir into the sauce or arrange with chicken in the next stage
  • After 25-30 mins, chicken should be almost cooked. Remove briefly, pour sauce into dish, place chicken back, bake for 15 mins.
