  • 200 g red lentils
  • 2 small onions

  • 2 tsp paprika
  • 1 tsp ginger

  • 1/4-1/2 tsp chili flakes
  • 250 ml coconut milk
  • 1 400 g tin chopped tomatoes
  • 500 ml vegetable stock
  • 2-3 cups spinach

Instructions
 

  • Sauté onions for 5 minutes before adding garlic. Cook for 2 minutes then spices (paprika, ginger, garam masala, turmeric, coriander, cumin, chili flakes) and cook for a further 1 minute, stirring well.
  • Mix in tomatoes, add pre-soaked red lentils, and pour vegetable stock. Simmer 10-15 mins.
  • Add coconut milk, let lentils cook until tender (15-20 mins).
  • Add fresh spinach, stir until wilted.
  • Adjust seasoning if needed.
