Step 1: Prepare the vegetables

Get ready to whip up a mouth-watering masterpiece with our healthy vegetarian tikka masala—a fantastic and healthy recipe perfect for a nourishing low-calorie dinner. Start by giving your veggies some love: chop that cauliflower into bite-sized pieces, slice up those vibrant carrots, and give the onion a nice, neat dice. These veggies are the true stars of the show, bringing not just flavour but a heap of nutrients to your plate.

Step 2: Sauté the vegetables

Now, grab a spacious pan, toss in the diced onions, and let them sizzle away for about 5 minutes. This step isn’t just about softening the onions—it’s about building a flavour base that’ll make your vegetarian tikka masala shine. When the onions are softening and slightly translucent, introduce the cauliflower and carrots to the party. Throw in a splash of water, just enough to cover the bottom of the pan. This little trick creates steam ensuring they’re on their way to becoming tender delights.

Step 3: Add tikka masala spices

As you watch the water do its magic, let’s talk about the spice blend that’s about to transform your dish. Coriander, paprika, cumin, chilli powder, ginger, turmeric, and those tiny powerhouses, cardamom pods—this blend isn’t just a flavour explosion; it’s a health boost too. Each spice brings not only its unique taste but a sprinkle of nutritional goodness, making your vegetarian tikka masala a true healthy indulgence.

Stir the spice blend into the veggies for about a minute, just long enough to be able to smell the tikka masala spices floating through the air.

Now, get ready for a flavourful rendezvous with the supporting players of our culinary spectacle – the chickpeas and tomatoes. As you introduce them into the pan, add a generous 200 ml of water, and let the ensemble simmer patiently for 10-15 minutes. This phase isn’t just about cooking the vegetables in the tikka masala; it’s a slow dance where tomatoes gracefully transform into a rich, saucy goodness, enveloping your veggies in layers of flavour. This intentional simmer allows the ingredients to mingle, creating a vibrant tapestry of taste that defines our Healthy Vegetarian Tikka Masala.
