Step 1: Cook the Chicken

Heat a pan over medium heat and add a little oil. Once hot, add the diced chicken and cook for 5-7 minutes, stirring occasionally, until golden brown and fully cooked. The chicken should be white inside with no pink remaining. Remove from the pan and set aside.

Meanwhile, bring a large pot of salted water to a boil. Add the red lentil pasta and cook according to the packet instructions (usually 8-10 minutes). Stir occasionally to prevent sticking. Once cooked set aside. but don’t drain just yet. I find lentil pastas can dry out quite quickly and you don’t want to be adding a lump of congealed pasta to your sauce!.

In the same pan, add the chopped onion and red pepper. Cook for 5 minutes until softened. Stir in the oregano, thyme, basil, and parsley, letting them cook for another minute until fragrant.

Pour in the passata and season with salt and pepper. Stir well and let the sauce simmer for 15 – 20 minutes, stirring occasionally, until slightly thickened.

Turn off the heat and stir in the fat-free natural yogurt until the sauce becomes creamy. Add the cooked chicken back into the pan, mixing well. Finally, add the drained pasta and toss everything together until evenly coated.

Ingredients
  

  • 200 g red lentil pasta
  • 400 g chicken breast diced
  • 1 onion chopped
  • 1 red pepper diced
  • 500 g passata
  • 100 g fat-free natural yogurt
  • 1 tsp oregano thyme, basil, parsley
  • Salt & pepper to taste
  • 2-4 tbsp parmesan

Instructions
 

  • Cook diced chicken in a frying pan for 5-7 minutes until golden and fully cooked. Set aside.
  • In the same pan, cook onion and red pepper for 5 minutes. Add herbs and cook for 1 more minute.
  • Cook red lentil pasta in boiling salted water for 8-10 minutes but dont drain until youre ready to mix with the sauce.
  • Stir in passata, season with salt and pepper, and simmer for 15 minutes.
  • Turn off heat, stir in yogurt, then add chicken and pasta. Toss everything together.
  • Serve with parmesan and enjoy!
