Step 1: Peri Peri Rice Seasoning:
To make this recipe you will first need to make my peri peri seasoning, which is a great addition to your spice rack and is also all you need to make the peri peri chicken Nando’s fake-away recipe too….apart from the chicken of course! Don’t worry, its super quick and easy it will literally take you 2 minutes.
Step 2: The Peri Peri Rice:
Once you have made the peri peri seasoning, your ready to begin. Weigh out 125g of dry long grain rice and place in a saucepan. Add half a red pepper, finely diced and roughly half a cup of peas. These peas can be tinned or frozen and wont need to be defrosted beforehand. Along with this add 1 tablespoon of peri peri seasoning and 1/2 teaspoon of turmeric to add to the colour.

Add 250-300ml of hot water and set the rice on the hob at a low heat. Cover the pan if you have a well fitting lid. If not, you may need to top up with boiling water if your pan runs dry before it has finished cooking. This wont affect the quality of the rice as long as it does not get the chance to start sticking to the bottom of the pan. After 15 minutes your rice should be cooked and ready to serve along with either the mango and lime chicken thighs or the medium peri peri chicken thighs recipe.

Can I reheat my Nando’s peri peri rice?
Yes! This rice will stay fresh for 3-4 days in the fridge but reheating will be necessary. I suggest reheating in the microwave for 2-3 minutes depending on portion size.
Can I freeze my rice?
You sure can! Portion into containers and let it defrost thoroughly before reheating.
