You also dont need to worry too much about having the correct quantities of each root vegetable, you can mix the ratios up, as long as you aim for a total of around 300g per portion.

Step 2: Boil
Place the diced vegetables into a large pot and cover them with cold water. Add a pinch of salt to the water, which helps to enhance the natural flavours of the vegetables. Bring the water to a boil over high heat, then reduce the heat to medium-low, allowing the vegetables to simmer gently. Cook for about 20-25 minutes, or until the vegetables are soft enough to be easily pierced with a fork. Be sure to check on them periodically, as the cooking time can vary depending on the size of the pieces and the type of root vegetable.

Step 3: Mash
Once the vegetables are tender, drain them well in a colander, shaking off any excess water to prevent the mash from becoming too watery. Return the drained vegetables to the pot. Add 3 tablespoons of butter and 1 tablespoon of milk to the pot. Using a potato masher, begin mashing the vegetables together.
