Lazy garlic often comes pre pureed in a tube or finely diced in a jar, they’re super handy to have in the cupboard or fridge for those times when you realise at the last minute that your garlic was a little older than you realised!

Stir in the chopped tomatoes, passata, lime juice, chopped coriander, and salt. Leave the mixture to stew for 5-10 minutes, allowing the flavours to meld together and the sauce to thicken slightly. You can prep the diced onion, pepper, and minced garlic in advance and store them in an airtight container in the refrigerator. Just be sure to cook the prawns and spinach fresh for the best texture and flavor.
