What are savoury pancakes?
Both me and my son absolutely love these savoury pancakes with sweetcorn and spring onion. They remind me of my egg muffins with peas and sweetcorn but with a slightly denser texture. I’d never have thought that vegetables would work in a pancake but they really do and it’s opened up a whole world of breakfast possibilities for me. They’re so quick and easy to make so you can’t go wrong. I haven’t been able to check how long these sweetcorn pancakes stay fresh as they never last long enough in my house however I would imagine they would only last 2-3 days due to the present of egg. These savoury pancakes contain 60kcal each.

Step 1: Mix together the pancake batter
To start with mix together ½ cup of plain flour with 2 eggs and whisk with a fork until there are no lumps. Add in the sweetcorn and sliced spring onion and mix again. I used tinned sweetcorn therefore no separate cooking of the sweetcorn was needed.
Step 2: Cook the savoury pancakes
Heat a frying pan until hot and drop tablspoon sized amounts of the mixture onto the hot pan. I had to do this in two batches. After 1-2 minutes flip the savoury pancakes using a spatula and cook the other side for another 1-2 minutes until cooked through. Don’t worry if your pancakes look a little thick when they first hit the pan. they will flatten out quite quickly without any need for spreading.
Can I freeze this recipe?
Yes! They will also last in the fridge for 2-3 days.
Can I reheat these savoury pancakes?
Sure! Microwave for approximately 1 minute.
