Ingredients
  

  • 2 fresh salmon fillets
  • 1 tbsp brown sugar
  • ½ tsp cayenne pepper
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 pinch salt & pepper

Instructions
 

  • Mix together the sugar and spices in a small bowl.
  • Pat the excess moisture off the salmon fillets. Press the sugar and spice mix into the salmon and repeat on all sides (apart from skin) to completely cover the salmon in the mixture.
  • Preheat an oven to 180c. Place the salmon on a large piece of tin foil and fold the foil over to create a parcel. Place on a baking tray and place in the oven for 15 minutes.
  • Remove the salmon from the oven and unfold the parcel. Remove any excess foil and place back in the oven for a further 10 minutes to let the outside crisp up.
