Step 1: Mix the sugar and spices

Mix together the brown sugar, cayenne pepper, smoked paprika, cumin, salt, and pepper in a small bowl. Ensure all the spices are well combined to create a harmonious blend of flavours. The combination of brown sugar, cayenne pepper, smoked paprika, cumin, salt, and pepper in step 1 creates a harmonious blend of flavours. The brown sugar adds a touch of sweetness, balancing the heat from the cayenne pepper. Smoked paprika brings a rich smokiness, complementing the salmon’s natural flavours. Cumin adds warmth and an earthy note, while salt and pepper season and balance the dish. Together, these seasonings create a well-rounded and balanced flavour profile, enhancing the taste of the salmon with sweetness, spiciness, smokiness, and earthiness.

Step 2: Prepare the salmon

Pat the excess moisture off the salmon fillets using a paper towel. This step helps the spice mixture adhere better to the fish. Gently press the sugar and spice mix onto the salmon fillets, ensuring all sides (except the skin) are coated evenly. The spice mixture will create a delightful crust on the salmon.

Shopping tip:

When selecting salmon fillets in a supermarket, there are a few key factors to consider for good quality. Look for fillets that have vibrant, firm flesh with a slight sheen. The fillets should not have any strong fishy odour but instead smell fresh and clean. Additionally, check for any signs of discoloration or dryness, as fresh salmon should appear moist and have a bright pink or orange colour.

Step 3: Bake your salmon

Preheat your oven to 180°C (350°F). Place the seasoned salmon fillets on a large piece of tin foil, and then fold the foil over to create a tightly sealed parcel. This method will allow the salmon to cook gently and retain its moisture. Transfer the foil-wrapped salmon parcel to a baking tray and place it in the preheated oven. Bake for approximately 15 minutes.

Step 4: Crisp up the sweet and spicy salmon

Once the initial cooking time has elapsed, carefully remove the salmon from the oven and unfold the foil parcel. Remove any excess foil to expose the fish. Return the salmon to the oven for an additional 10 minutes, allowing the exterior to crisp up and form a delicious caramelized coating whilst the inside continues to cook.

Can I use a different type of fish instead of salmon for this recipe?

Absolutely! While salmon works wonderfully in this recipe, you can experiment with other types of fish like trout or cod. Adjust the cooking time accordingly based on the thickness of the fillets.

Is this recipe suitable for individuals following a low-sugar diet?

The sugar content in this recipe comes mainly from the brown sugar used in the spice mixture. However, the amount used is relatively small and evenly distributed across the two servings. If you have specific dietary requirements, you can reduce or substitute the sugar with a natural sweetener alternative like honey or maple syrup. If you try a substitution be sure to let me know how it goes!

Can I grill the salmon instead of baking it?

Yes, you can definitely grill the salmon for a smoky flavour. Preheat your grill to medium heat and cook the salmon for approximately 4-5 minutes per side. Be aware that you may lose or burn some the sugar and spice coating hence my decision to bake this healthy salmon recipe.

Can I freeze or reheat this recipe?

No, I would not recommend freezing or reheating this recipe, it is best made fresh as with most fresh fish dishes.
