Tuna Crunch is probably my favourite sandwich filling. Its also great on toast which is what this Tuna Crunch Toast Recipe portrays. Its full of protein and veggies and only takes 5 minutes to whip up before its ready to go in a great low calorie sandwich, on toast or even as a thick dip for chunky veggies. I’ve also seen a friend use this recipe to use as a pasty base substitute on quiche. It was super yummy!
You can pre cook fresh tuna for this tuna crunch toast recipe or you can use canned like I have. In the UK tuna steaks are crazy expensive so its something I rarely buy. Tinned tuna is around 80p a can which is much more affordable. Just make sure you choose tuna in spring water to keep this recipe oil free. Drain and empty 1 can into a bowl.

Chop up one whole spring onion. You can use two if they’re particularly small. I like to cut down the onion lengthways keeping it attached at the top and then chop widthways to get nice small pieces. If you dont have spring onions or salad onions, red onions also work well. Dice a 1/3 of a pepper, you can use any colour, here I used orange. Red peppers are the sweetest and green peppers have a more bitter taste that is usually better suited to cooking. Add this into the tuna along with a good crack of black pepper and 1 tablespoon of light mayonnaise. Sorry, I don’t yet have a recipe for that but I’m working on it! SO far my oil free mayonnaise recipe looks great, but doesn’t taste great…Yet!

Mix it all together and your Tuna crunch is ready. Serve on toast or in a sandwich with salad. Also goes great in a cheese toastie!

Ingredients
  

  • 1 can tuna 100g
  • 1 spring onion
  • 1/3 small red pepper
  • 1 tbsp light mayo
  • salt and pepper to taste
  • 1 slice wholemeal bread toasted

Instructions
 

  • Drain the can of tuna and add it to a bowl
    1 can tuna
  • Chop up the pepper and onion into very small chunks and add to the tuna
    1 spring onion, 1/3 small red pepper
  • Add mayonnaise and a crack of black pepper and mix well
    1 tbsp light mayo, salt and pepper
  • Spread your Tuna crunch onto a slice of wholemeal toast and enjoy!
    1 slice wholemeal bread
