What makes these turkey and vegetable skewers healthy?

This recipe shines as a beacon of health, perfectly fitting into the realm of low-calorie recipes and dishes with lean meat. Turkey breast, the star of this show, is a lean protein powerhouse, aiding muscle growth and repair while keeping calorie counts in check. The medley of mushrooms, courgette, and red onion not only adds a delightful crunch and variety of flavours but also brings a wealth of essential vitamins and minerals to the table. By marinating the turkey in a homemade Healthy Hearty Wholesome BBQ seasoning, we elevate not just the taste but also infuse the dish with a blend of aromatic herbs and spices.

Step 1: Marinate!

To start, whisk together a dynamic marinade by combining 2 tablespoons of my BBQ seasoning with precisely 150-200ml of water, ensuring an optimal coating for the turkey. Submerge 300g of diced turkey in this flavourful elixir within a dish or deep plate, covering it generously. Allow this exquisite blend to work its magic by marinating the turkey in the refrigerator for a minimum of 4 hours. This marinade not only infuses the turkey with a symphony of savoury notes but also stands as a testament to the myriad uses of my BBQ seasoning blend.

Step 2: Prepare your veggies

As the turkey takes its time to marinate, turn your attention to the vegetable preparation. Begin by skillfully slicing the courgette into substantial disks, providing a satisfying thickness for grilling. Take the red onion, carefully halving it and then separating its layers, ensuring that each piece contributes to the overall texture and flavor profile. Finally, handle the mushrooms with precision, cutting them accordingly to create bite-sized portions that will harmonize with the other components. This meticulous approach not only ensures a visually appealing skewer assembly but also guarantees that each vegetable, when combined, adds a distinct layer of taste and texture to complement the marinated turkey.

Step 3: Skewer and grill!

Once your turkey has taken in all the flavorful goodness during the marination process, it’s time to assemble the skewers with a blend of veggies. While you can easily find long wooden BBQ skewers at most supermarkets, I’d suggest considering metal ones, especially if you’re planning to barbecue. Thread the marinated turkey and the meticulously prepped vegetables onto the skewers, creating a delightful mix of textures and flavors. To cook, position your assembled skewers on a grill tray, and set the heat to high for about 15 minutes or until the turkey is thoroughly cooked. Remember to turn the skewers halfway through the cooking time to ensure an even and succulent result.

Tzatziki is a beautiful pairing for these skewers and only takes a couple of minutes to make so be sure to add it to your BBQ feast!

Tzatziki Recipe
I think my most important tip for Tzatziki is to use fresh ingredients, fresh yogurt, fresh crunchy cucumber but especially fresh herbs. Fresh herbs are much more fragrant than dried herbs and their flavours will flow beautifully throughout the yogurt. Traditionally, tzatziki would be made with full fat Greek yogurt however for this recipe I swap to fat free to keep the recipe diet friendly.
