Another meal that can be described with my three favourite food words: healthy, hearty and wholesome! Me and my son really wanted to feel those BBQ summer vibes when I created this recipe, although being March at the time of cooking, we grilled inside instead of outside on the BBQ. Paired with some spicy rice and tzatziki, this is a meal you’ll spend all week looking forward to! This recipe should make 4 skewers.

 

This is another recipe that requires my BBQ seasoning blend, it's real quick and easy to make so give it a whirl, there's more uses for it than I can even list! Take 2 tablespoons and mix in with 150-200ml of water to make a marinade for your Turkey, place 300g of diced turkey in a dish or deep plate and pour the marinade on top. Cover the dish, place in the fridge and marinade the turkey for a minimum of 4 hours.

Chop your veggies into thick slices, I've used mushroom, onion and courgette. If your mushrooms are really small, leave them whole as they break easily on the skewer if they're too small.

Assemble your skewers once your turkey has marinated, you can buy long wooden BBQ skewers like these in most supermarkets although I would recommend purchasing metal ones if you intend on barbecuing. Place your skewers onto a grill tray and heat on high for 15 minutes or until Turkey is thoroughly cooked, turning half way through cooking time.

Tzatziki is a beautiful pairing for these skewers and only takes a couple of minutes to make so be sure to add it to your BBQ feast!

 

Ingredients

♥ 300g diced turkey

♥ 5-6 small mushrooms

♥ ½ courgette

♥ ½ small red onion

♥ HealthyHeartyWholesome BBQ seasoning

♥ 150-200ml water

 

Method:

  1. Make a marinade with my BBQ seasoning and 150-200ml of water and pour over the diced turkey.

  2. Cover and place in the fridge for a minimum of 4 hours.

  3. Meanwhile, slice your courgette into thick disks, cut your ½ onion in half and separate layers and cut your mushrooms either leave whole or cut in half depending on size.

  4. Load up your skewers alternating between turkey and veggies and place on a grill tray. Grill for 15 minutes or until thoroughly cooked, turn half way through cooking.

  5.  Serve with tzatziki and rice.
