Over the years, the classic cottage pie has been adapted to suit various dietary preferences, leading to this vegetarian cottage pie version. Packed with nutritious vegetables, this low calorie meal for weight loss is perfect for those cold winter evenings when you crave something comforting and nutritious. This recipe can also be made vegan by substituting butter and cheese for vegan alternatives.

Step 1: Pre-soak your lentils

Start by soaking the green lentils in boiling water for about an hour. This initial soaking process helps to soften the lentils, which reduces the overall cooking time and ensures they have a pleasant texture in the pie. Begin by placing the lentils in a heatproof bowl. Pour enough boiling water over the lentils to cover them completely. Let them soak for about an hour, allowing them to absorb the water and swell. Once the lentils have soaked, drain and rinse them under cold running water to remove any remaining debris or dust. This step is crucial for achieving a tender and flavourful lentil filling in your vegetable cottage pie.

Step 2: Create the mashed potato

Peel and dice the potatoes into smaller chunks to speed up the cooking process. Place the diced potatoes in a large pot of cold water. Bring the water to a boil over high heat, then reduce to a simmer. Boil the potatoes until they are very soft and easily pierced with a fork, usually about 15-20 minutes.

Drain the potatoes well in a colander and let them sit for a minute or two to allow excess moisture to evaporate. Return the potatoes to the saucepan. Add 2 tablespoons of low-fat butter and a pinch of salt. For the creamiest mash, use a potato masher or a potato ricer to mash the potatoes until smooth. Avoid using a food processor or blender, as these can make the potatoes gluey. To achieve the tastiest, smoothest mashed potatoes, you can add a splash of milk along with the butter. Of course, you can complete this step along side the vegetable filling, I just like to get it out of the way first so that I’m not trying to multitask.

Step 3: Prepare the vegetables

Dice the onion and finely chop the garlic. Peel the carrots and cut them into large chunks for a hearty texture. Halve or quarter the chestnut mushrooms to keep them chunky, which adds a satisfying bite to the filling. In a large frying pan, heat a small amount of avocado oil over medium heat. Once hot, add the diced onions and mushrooms, cooking for around 5 minutes until they begin to soften and the onions become translucent. This process helps to build the base flavour of your vegetable cottage pie.

Next, add the chopped carrots and garlic to the pan. Stir well to combine. Sprinkle in 1 tablespoon of thyme, 1 tablespoon of rosemary, 3 bay leaves, and 1/4 teaspoon each of salt and pepper. Cook for an additional 1-2 minutes until the mixture becomes fragrant. This step ensures the vegetables are well-seasoned, adding depth to this vegetarian recipe. The blend of herbs infuses the dish with a warm, comforting aroma, making it an ideal choice for winter recipes.

Step 4: Add the gravy

Add the soaked and drained green lentils to the frying pan. Pour in 800ml of vegetable stock and 150ml of passata, stirring well to combine all the ingredients. Bring the mixture to a simmer over medium heat. Cook for 20-30 minutes, allowing the lentils to soften and the stock to reduce. This process creates a rich and flavourful base for your vegan cottage pie. You do not need to add the peas yet as these will only take a few minutes to cook.

The lentils absorb the vegetable stock, becoming tender and adding a hearty texture to the filling. Stir occasionally to prevent sticking and ensure even cooking. As the stock reduces, the filling will thicken slightly, concentrating the flavours. Developing the savoury, satisfying taste is key to making this dish a perfect low calorie meal for weight loss.

Step 5: Thicken the vegetable filling

To thicken the filling, you’ll need to create a cornflour slurry. In a small bowl, mix 2 tablespoons of cornflour with 2 tablespoons of cold water. Stir until it forms a smooth paste with no lumps. This slurry will help to thicken the sauce, giving your vegetable cottage pie a hearty, gravy-like consistency. Do not add the cornflour straight into the vegetable filling on its own as it will not mix in. Pour the cornflour slurry into the pan, stirring constantly to ensure it’s evenly distributed. Add the 100g of peas at this stage as well, incorporating them into the filling. Continue to cook for about 5 minutes, allowing the slurry to thicken the mixture. This step transforms the filling into a rich and flavourful base, perfect for your vegetarian recipe.

Step 6: Assemble the vegetable cottage pie

Transfer the vegetable and lentil filling to a large ovenproof dish, mine was approximately 28cmx20cm, spreading it out evenly to cover the bottom. So that every bite of the vegetarian cottage pie is packed with flavour. Next, take your creamy mashed potatoes and carefully spread them over the top of the filling. Use a spatula or the back of a spoon to smooth out the mash, creating an even layer. Make sure that you don’t press don’t too hard on the mashed potato or you will just push it into the vegetable filling and it will go soggy whilst cooking. For added flavour and a golden, crispy top, sprinkle 25-50g of low fat cheddar cheese over the mashed potatoes. This adds a delightful texture contrast and slight tang to the creamy mash and savoury filling, making it an irresistible winter recipe.

Step 7: Bake vegetable cottage pie

Preheat your oven to 200°C (180°C fan/gas mark 6). Place the assembled vegetable cottage pie in the oven and bake for 30 minutes. During baking, the top of the mash will become slightly crispy, and the cheese, if added, will melt and turn golden brown. The edges should be bubbling, indicating that the pie is heated through and the flavours are well-developed. Baking the pie helps meld the flavours together, making it a delicious and satisfying low calorie meal for weight loss.

Once baked, remove the vegetable cottage pie from the oven and let it sit for a few minutes before serving. This allows the filling to set slightly, making it easier to portion out. Ingredients
  

For the Mash Topping:

  • 1 kg potatoes
  • 2 tablespoons low-fat butter
  • Pinch of salt

For the Vegetable Filling:

  • 1/2 cup dried green lentils
  • 250 g chestnut mushrooms
  • 400 g carrots
  • 100 g peas
  • 1 onion
  • 4 cloves garlic
  • 1 tablespoon thyme
  • 1 tablespoon rosemary
  • 3 bay leaves
  • 1/4 teaspoon salt & pepper
  • 800 ml vegetable stock
  • 150 ml passata
  • 2 tablespoons cornflour

Instructions
 

  • Soak the green lentils in boiling water for about an hour, then drain and rinse.
  • Peel and dice the potatoes into smaller chunks. Boil until soft, then drain. Return to the saucepan, add 2 tablespoons of low-fat butter and a pinch of salt, and mash until smooth.
  • Dice the onion and chop the garlic. Peel and chunk the carrots. Halve or quarter the mushrooms. Heat a small amount of avocado oil in a large frying pan, then cook the onions and mushrooms for about 5 minutes until soft. Add the carrots, garlic, thyme, rosemary, bay leaves, salt, and pepper. Cook for 1-2 minutes until fragrant.
  • Add the soaked lentils, vegetable stock, and passata to the pan. Simmer for 20-30 minutes until the lentils are soft and the stock has reduced.
  • Mix 2 tablespoons of cornflour with 2 tablespoons of water or stock to make a slurry. Stir this into the pan along with the peas and cook for another 5 minutes until thickened.
  • Transfer the vegetable filling to an ovenproof dish. Spread the mashed potatoes evenly on top. Sprinkle a small amount of cheese over the mash if desired.
  • Preheat the oven to 200°C (180°C fan/gas mark 6). Bake the pie for 30 minutes until the top is crispy and golden brown.
