What is yogurt bark?

Yogurt bark is such a quick and easy thing to make that it actually makes it really hard to write a recipe for it, because there is so little to actually write! Yogurt bark is yogurt frozen with fruit or other toppings and cut into slabs or chunks, kinda like an ice lolly with no stick. Yogurt bark makes a great snack or dessert for any age, particularly in the hot summer sun. When made with fat free yogurt this yogurt bark recipe is a super low calorie snack which contributes to a healthy diet. These pieces of yogurt bark do however defrost quickly, so maybe not the best addition to a picnic.

Step 1: Choose your yogurt

So firstly, choose your yogurt base, for this recipe i used ASDA’s fat free Greek yogurt but you can in theory use any kind of yogurt, it doesn’t have to be unflavoured and if your not counting calories it doesn’t have to be fat free either, but we’re all here for the healthy recipes right?! I chose to flavour this yogurt with honey but again this step is down to preference. Line a baking tray with foil so that you can remove your yogurt bark easier later. Pour your yogurt onto the tray and smooth out.

Step 2: Choose your toppings

Then, you need to choose your toppings. I chose a mixture of strawberries and raspberries. I cut the strawberries into thin slices and halved the raspberries. Place your toppings on evenly and place your yogurt bark in the freezer, on a flat surface so that it doesn’t run off!

Step 3: Freeze your yogurt bark!

Once frozen solid, cut your yogurt bark into 12 pieces and store in the freezer in portions.

Yogurt bark can come in so many different variations, why not try:

  • Chocolate chips/cacao nibs
  • Vanilla and banana
  • Hazelnut

Ingredients
  

  • 500 ml fat gree greek yogurt
  • 2.5 tbsp honey
  • 2 strawberries large
  • 6 raspberries

Instructions
 

  • Mix honey and yogurt together.
  • Line baking tray with foil and spread yogurt onto baking tray.
  • Top with sliced fruit and place into freezer for 4+ hours.
  • Break or cut into pieces and return to the freezer ready to be eaten.
