When you’re cooking with a lot of vegetables or other ingredients that reduce in size as they cook it can be very tricky to accurately judge how much to cook. Similar to the ‘enough pasta to feed an army’ conundrum. For as long as I remember when I’ve cooked stir fry’s I’ve used the 5 handfuls of food rule. It’s pretty self explanatory: 1 handful of one ingredient, 1 handful of another ingredient and so on. The caveat to this is that it only works if you have 4 types of vegetable a maximum of 1 protein or ingredient that wont reduce, so if it helps you understand, technically its the 4 handfuls of vegetables and 1 handful of something else rule. If you add noodles to your stir fries, you will also have to account for this, I would recommend a small handful of noodles to replace 1 handful of vegetables. Oh and that’s all per person, so if you were cooking for 4 people, you would need a total of 16 handfuls of vegetables and 4 handfuls of protein or noodles. Hopefully that makes sense!
