Ingredients
  

  • 3 chicken breasts
  • 350 g chestnut mushrooms
  • 2 carrots
  • 1 onion
  • 1 litre vegetable stock
  • 1 litre chicken stock
  • 2 tbsp apple cider vinegar
  • 200 ml milk
  • 2 tbsp cornflour
  • 1 tsp rosemary
  • 1 tsp oregano
  • 1 tsp thyme
  • ¼ tsp pepper

Instructions
 

  • Prepare ingredients, slice mushrooms, dice onion and carrots, dice chicken into chunks.
  • In a large saucepan fry off mushrooms and onion until reduced, 5-7 minutes.
  • Add in herbs and continue to fry until fragrant. Add in all of the stock, chicken and carrot.
  • Bring to a boil and simmer for 30 minutes. Add in the milk and cornflour slurry and stir until slightly thickened. Serve with crusty bread.
